All last week my friend Laura was talking about wanting to make some sort of mint chocolate cookies, which put me in the mood for that lovely combination. So I made these cookie bars, and while they are delicious (really – it’s been my highest praised cookie so far), the chocolate/peppermint duo wasn’t quite what I needed to satisfy that craving. And then I found these in the grocery store:
And I knew I had to make something delicious with them because they were exactly what I wanted. So I made some very basic chocolate chip cookies and tossed in the chips. Perfect. A great little minty (but not overly so!) touch when you bite in.
Mint Chocolate Chip Cookies
Print this recipe!
1 cup (2 sticks) butter, softened
1 cup lightly packed brown sugar
3/4 cup sugar
1 teaspoon vanilla
2 eggs
2 1/2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1 heaping cup milk chocolate chips
1 heaping cup Andes Creme de Menthe chips
Cream butter and sugars together until very creamy, about 2 minutes on medium speed. Stir in vanilla. Beat in eggs one at a time, mixing until well incorporated. Stir in flour, baking soda, and salt, mixing until just combined. Stir in chocolate chips and Andes chips by hand.
Divide dough in half, roll into two logs, wrap in plastic, and chill for 2 hours or until firm.
Preheat oven to 350°. Line to baking sheets with parchment paper, silicon mats, or greased aluminum foil. Unwrap one log and slice into 16-18 equal cookies. Space evenly on baking sheets and bake for 10-12 minutes or until the edges are lightly brown and the cookies look set. Cool 2 minutes on baking sheets before transferring to a wire rack to cool completely. Repeat with remaining log.

Oh, I LOVE King Arthur Flour! I would love to win. I’ve already done a fair bit of holiday baking (including my first-ever successful batch of chocolate fudge, yay!), but I’m still really looking forward to the other items on my list.
