12 Days of Christmas Cookies: Peppermint Chocolate Bars

Peppermint and chocolate are a classic Christmas cookie combination.  I’ve always enjoyed the flavor so I was excited when I found this recipe last year.  It’s very simple, using a bag of cookie mix and canned frosting, which makes these great for when you need a quick dessert to bring to a party or to give as a last minute gift or thank you.

Peppermint Chocolate Bars

1 bag double chocolate cookie mix (recommended: Betty Crocker)
1/4 cup very soft butter
1 egg
2-3 tablespoons water
1/2 cup crushed peppermints
1 cup white frosting (I used Betty Crocker’s whipped fluffy white)

Preheat oven to 350°.  Grease an 8×8 square baking pan.

In a medium bowl, mix cookie mix, butter, egg, and 2 tablespoons water.  Stir to combine.  If the batter looks dry or you are having trouble incorporating all the cookie mix, add up to an additional tablespoon of water.

Spread half of the batter into prepared pan.  Top with a 1/4 cup of crushed peppermints.  Dollop remaining batter evenly over the top.  Bake for 20-25 minutes or until a toothpick comes out clean.  Let cool in pan on a wire rack before frosting.

Turn the bars out onto a serving platter or cutting board.  Mix the frosting and the remaining 1/4 cup crushed peppermints in a small bowl.  Spread the frosting evenly over the top of the bars.  Cut into 16 pieces and top with additional crushed peppermints if desired.
