Food Waste Friday

Currently, my counter looks like this:

But I have a feeling by early next week, it’s going to be very full if I don’t hurry up and eat some stuff.  I have some watermelon that I sort of forgot about it.  (It keeps for a while already cut, right?)  Some raspberries that need to be eaten or frozen today (!!) and some a few other things that may be in trouble.

But for right now, I have a clean counter.  Yay for no food waste!

I had the same thing happen with half a watermelon. It still smelled and tasted okay, so I’m eating half of it with lunch today. I’m just so over watermelon.

I had the same problem with watermelon earlier and I tried a new thing. I cut it up, blended it, and froze it into to ice cubes. They can be used in drinks or smoothies. However, if the truth be told, we’re not using up our watermelon ice cubes as fast as I hope. We need to get back into the smoothie habit.

I never make smoothies. I really should. A watermelon smoothie (maybe with some mint?) sounds delicious!
