I knew I wouldn’t be able to get away with not wasting anything this week.  I made mashed potatoes over a week ago, and I just made way too much for us to eat.  They sat all lonely in the fridge until Mom threw them out.  They just weren’t going to get eaten.  We also threw away some chicken salad that Mom made a few weeks ago.  I think it got lost in the fridge; I certainly had forgotten it was in there.  Dad was able to eat the last of the risotto for lunch yesterday, and so now the only leftovers are from Wednesday and Thursday.  We would have eaten them for lunch, except it’s Friday, so no meat for us.  I’m sure they will get eaten tomorrow.  
The chicken salad went out earlier this week without a picture, but here are those pesky mashed potatoes.  I’m making some on Sunday and planning on making less this time!

Mashed potatoes and chicken salad are two of my favorite foods! I like to make mashed potato pancakes with leftover potatoes. I also use chicken salad like a dip with crackers or spread it on a rice cake.

Tip for mashed potatoes that I just learned! Make a bunch, put them in muffin cups (if you have silicon then that's the easiest because you can just pop them out) freeze them and then bag them up. We're eating mashed potatoes tonight that I froze…and it's a perfect serving too!
We also happened to have potatoes that I HAD to use up, so that was the other issue, haha.

I just bought a huge 8 pound bag of potatoes for (get this!) $.99 today so potato pancakes and freezing them will come in handy. Not sure how long potatoes keep, so I plan on cooking most of them within the next week or two and freezing them. Thanks for the suggestions!
