Thanks to everyone for their sweet and encouraging comments last week.  I got myself to the doctor and am trying out a new medication – I’ll keep you posted on how it is going!  One of my goals this month is not eat out so much, so I’ve created an easy, yet delicious menu plan that I shouldn’t have much trouble following.

On another note, how was everyone’s weekend?  Anyone do anything exciting?  I spent my babysitting my three cousins (ages 6, 4, and 18 months); it was fun but exhausting.  Kids are a lot of work. 🙂

Sunday: Chicken Provencal Soup, Butterscotch Blondies

Monday: Tilapia with Caper-Parsley Sauce (bumped from last week and um, the week before.  Oops.)

Tuesday: Penne a la Betsy (without the shrimp)

Wednesday: Dinner with a friend

Thursday: Crunchy-Garlic Chicken, Roasted Broccoli

Friday: Leftovers or breakfast for dinner

Saturday: TBD depending on if I go to the ball game or not

Breakfasts are Honey Bran Muffins, cereal, and Bagel-fuls.  Lunches are leftovers, sandwiches, salads, and soup.  I might also try making Italian Cheese Twists with white wheat flour.

I’m so glad you went to the doctor and are getting some help. It makes a world of difference.
So, getting up on time – I try to go to the gym in the morning, and if I miss that, I have to go in the afternoon, and sometimes that really messes me up, like if I have knitting. So then I HAVE to go in the morning, which means I HAVE to get up. I also keep fun soap for morning showers. I have one that smells like coffee.
I just made apple pie and Irish soda bread. I’ve been screwing up the soda bread lately, but this one looks pretty good. Hopefully it tastes pretty good, too.
And.. let’s see, what else. Oh, I’m on ‘staycation’ all week, which is greeeeeeeat. This morning I went out to brunch when it wasn’t crowded, and I cleaned, and I shopped for my nieces’ holiday presents, and I baked (aforementioned) and … now it’s laundry time! And then reading. Can’t forget reading. 🙂
