Sorry I’ve been MIA the past few days.  I really needed some time to unplug.  I ended up taking a personal day off from work on Friday because I woke up feeling like I just couldn’t do it.  Ever have those days?  Friday ended up being great and I didn’t get out of my pajamas until almost 5:00 when I had to get dressed for a friend’s engagement party.  I did nothing but catch up on my DVR, read, and do a little (much needed) housework.  I felt much better all weekend because of it.

How was your weekend?  Did you have any great meals or plan anything super fabulous/delicious?

This week’s menu plan is nothing special.  I’m still feeling a little down so I’ve planned some simple meals (yay for finally eating everything on last week’s meal plan!) and I need to do some baking.

Sunday: Leftover pizza

Monday: Quinoa with sun-dried tomatoes and basil 

Tuesday: Lemon chicken with potatoes

Wednesday: Leftovers

Thursday: Lentil soup

Friday: Leftovers or breakfast for dinner

Saturday: Pasta with red sauce (from the freezer)

Breakfasts are apple cinnamon muffins, bagel-fuls, and yogurt.  Lunches are leftovers or sandwiches on homemade bread.  Snacks are fruit and applesauce.
