I’m trying to keep this week simple since I have a lot of baking to do and I don’t want a refrigerator full of leftovers before Thanksgiving. That’s a sure-fire way to have lots of food waste. This week I have planned:
Sunday: Broccoli and pasta tossed with olive oil and toasted garlic
Monday: Lentil soup (from the freezer)
Tuesday: Bible study (dinner is provided)
Wednesday: Gnocchi mac and cheese
Thursday: Thanksgiving! I’m bringing the best rolls ever, an apple cream cheese bundt cake, and brownies for the kids.
Friday: My cousin is getting married!
Saturday: Thanksgiving 2.0 featuring my dad’s amazing turkey, my mom’s dressing, pan-roasted Brussels sprouts, butternut squash gratin, rolls, and pumpkin cobbler with ice cream.
Breakfasts are Thanksgiving muffins (recipe coming tomorrow!) and lunches will be leftovers.
I think I’m going to be eating leftovers for the rest of my life.
