This week’s menu planning is pretty much non-existant. I’m leaving for my best friend’s wedding (yay!!) on Friday and, as always, I want to leave town with an empty fridge. And my birthday is this week! And I get to have two birthday dinners AND a birthday lunch! So you see why I didn’t really need to menu plan this week. But of course I did anyway. Because I’m OCD like that. 🙂
Sunday – Dinner with my best friend and her fiance for my birthday!
Monday – There’s some sort of frozen casserole from this summer in my freezer; I’m going to eat that.
Tuesday – Pasta and red sauce (from the freezer)
Wednesday – Leftovers
Thursday – My birthday! Out to dinner with my parents
Friday – Off to the wedding!

My goal by the end of the year is to have our fridge “mostly” free of wedding cake. I need to reclaim some space in there. Because OMG.

I literally have no idea what the casserole is. It’s looks vaguely like something with pasta, mushrooms, and breadcrumbs, but who knows.
Hopefully it will still taste good!
I totally like to clear out my fridge before vacation–if I am going to be gone more than a couple of days, everything will need to be thrown out when I get back anyway. There is always plenty of work to do unpacking without having to clean out the fridge, too.
