Somehow, and very slowly, I’ve started to feel like my old self again. I have a ton more energy, but mostly importantly, my focus seems to be improving. I’m still having problems with anxiety and the weather affects my mood greatly, but it feels good not to feel so…blah all the time.
Which brings me to the point of this post: feeling better means I feel like eating delicious, home cooked meals again. Feeling like eating means feeling like cooking. I was cooking before, just not anything difficult or time consuming and relied on frozen or boxed meals or takeout way more than I should have.
So yay for feeling better and yay for cooking better food, but maybe not so yay on the waistline or food waste front. I’ll have to work on that. 🙂

Monday: Tofu fried rice, crab rangoon
Tuesday: Patty melts, fries, broccoli
Wednesday: Leftovers
Thursday: Pasta with pesto and broccoli
Friday: Leftovers or breakfast
Saturday: TBD
