in Menu Plan Monday

Hello my lovelies!  I hope you had a nice weekend.  I took the time to do some decompressing and relaxing.  I also intended to do some cooking but I was enjoying my quiet so much that I couldn’t bring myself to get off the couch.  🙂

I was really excited about trying a new crock pot recipe (Slow-Cooker Baked Spinach and Mushroom Rigatoni) last night but I was so full from brunch that I didn’t end up cooking.  I joined a recently created local chapter of the FYA Book Club and our first meeting was yesterday over brunch.  I had an awesome, but super filling, breakfast burrito.  Maybe I’ll try the crock pot pasta next week.

Here’s my plan for the rest of the week:

Monday: Lentil soup (from a mix), cornbread

Tuesday: Bible study where dinner is provided

Wednesday: Pesto pasta with sausage

Thursday: Sesame chicken with rice

Friday: Leftovers

Lunches will be leftovers except for the one day I allow myself to buy lunch at work.  Breakfast is leftover French toast from Saturday, bagels, or fruit and yogurt.

What’s on your menu this week?

I want so badly to plan weekly menus and actually stick to them, but Rob (and pregnancy) makes it so difficult! He is incredibly picky and half the time that I pick something, he decides that he doesn’t want that. For instance, last night, I had planned on having lasagna and these really yummy cheese rolls that I picked up from the bakery. Rob decided that he wanted to make roast beef sandwiches out of the cheese rolls, so we had to go back to the grocery store to buy the flipping roast beef, which is like $7 a pound, when I already had the lasagna frozen in the freezer. Ugh! Plus, I’ve noticed that I have more food aversions that I do cravings, so I may plan tilapia (for instance), then on the way home from work, the thought of tilapia makes me want to throw up, so we have to come up with something else. It’s not cheap or convenient! 🙁

Pregnancy and weird food cravings/aversions are something you just have to deal with, I think. My thought to dealing with that frugally is to buy things that keep well or can be frozen, and make sure you have a few things on hand that always sit well with you, like soup or PB&J. That way you have something to fall back on when whatever you planned makes you feel ill. Then you can cook that dish another night when you’re feeling better.

As far as Rob goes…I wouldn’t allow that to happen. But that’s me, not you. I actually posted this earlier today on someone else’s blog: the rule is “I cook, I plan. You cook, you plan”. Basically meaning that if I’m going to cook, then what I cook is what you’re going to eat. If you want something else, you plan it and cook it. There is no going back to the store, there are no disagreements about food. What’s on the menu is what’s for dinner, end of discussion.

Harsh I know, but I sort of figured it out when I was living with my parents and cooking. And I’ve continued it as a way to keep my grocery budget down because if I ask The Carpenter what he wants to eat this week, I’m going to spend a fortune at the store.

But again, that’s me, and my slightly over-assertive personality. 🙂

“I cook, I plan. You cook, you plan.”

I love it! He and I have already decided that when the baby gets older, she has to eat what we’re having for dinner or be hungry (people will drive all over here & yonder to get Kealey something extra, even at holidays, because she’s so picky. Um, no ma’am), so I guess he should go ahead and start setting an example!

That’s what I plan on doing too. I understand not liking certain foods, but being so picky that it disrupts everyone else’s meal is too much.
