Happy Monday! How was your weekend? Mine was full of weddings and wedding-related activities. One of my closest friends from high school got married on Saturday morning so Friday was taken up with getting ready for the wedding and then I was one of her bridesmaids. Saturday night the younger sister of a friend of mine got married and I went for moral support.
Yesterday, I planned on resting and relaxing but somehow found myself in the middle of a Say Yes to the Dress: Atlanta marathon and paging through bridal magazines. Then The Carpenter decided that my parents needed to meet his kids so we all had dinner last night. It went really well, I think, and I was fine after an anxiety pill and a glass of wine. 🙂
So I’m hoping for a pretty quiet week. I need some time to breath.
Monday
Lunch: leftover chicken fingers, hummus and chips
Dinner: Turkey burgers, fries, and salad
Tuesday
Lunch: leftover burger and salad
Dinner: Bible study (dinner provided)
Wednesday
Lunch: BLT, hummus with carrots and chips
Dinner: Chicken crescent roll casserole, sauteed squash and zucchini
Thursday
Lunch: leftover casserole
Dinner: Chicken picatta pasta
Friday
Lunch: leftover pasta
Dinner: Breakfast for dinner (probably biscuits, eggs, and bacon)

Rob has started a new job (same company, just different position), which requires him to travel to Knoxville during the first part of the week, so I’m on my own for dinner on Mondays and Tuesdays and I seriously struggle when it comes to making food for myself. I’m still not very confident in my cooking abilities (especially when meat is involved, but I think that is more of my OCD/fear-of-foodborne-illness than anything) and I don’t want to pay for fast food, so tonight I’m honestly probably going to have hummus and pita with a side of chips & french onion dip (super healthy, I know). Tomorrow will probably be beefaroni, or maybe a salad from the Ingles salad bar (although, I’d rather not go buy anything). Wednesday we’re going out for our anniversary. Thursday and Friday will be tacos and cheddar brats (respectively). Then, we’re having a yard sale Saturday, so Lord only knows what we’ll have the energy to conjure up. I so want to be healthy and organized when it comes to meal planning, but I’m seriously struggling!!

I think for you the first thing you need to make meal planning more successful is some pretty printables. There are TONS out there so I’m sure you can find some you’ll like. And then it’s just about carving out some time with your coupons, grocery ads, and computer/cookbooks to try and figure out what you’re going to eat. I usually do mine on Sunday mornings while watching tv. 🙂 I know being pregnant isn’t helping anything, but I would think it would make it easier knowing you have stuff on hand to cook/eat health(ish) meals when you get home from work and/or don’t want to even think about deciding on something.
Pregnancy is tough! I’m sure things will get back to normal after Livvie comes and you feel more human again.
Your menu looks good. I’m trying to keep it simple this week with things I know we all like such as tacos.
I was thinking about simple meals this week…spaghetti, tacos, stir-fry, etc. It’s rare that I cook meals like that for myself (they seem more family meals to me), but I can totally see myself being very big on planning super simple meals down the road, especially when it’s too hot to think about cooking a casserole.
