Hello hello!
I did really well last week; I only ate out once! I finished up almost everything I wanted to. My freezer is starting to look a little emptier but unfortunately, my packed-full pantry still looks the same. 🙁 Here’s what I was supposed to use up last week:

Not too shabby right? I did eat spaghetti and meatballs like I had planned, but there was more than I thought so I’ll have to finish the rest up this week. I didn’t make pizza on Friday night; The Carpenter and I went to see a movie and I ate too much popcorn. 😉 Then I came home and discovered Caty has worms. But that’s another story for another time.
It is especially important that I stick to the menu plan and eat up as much as possible because I’m headed to the beach (yay!!) on Friday and I don’t want to leave a fridge full of leftovers. It’s also important because at the end of this week, I’ll have reached the halfway point in this project and I want to be able to tell I have made a difference.
So on to this week’s plan!
Sunday
Lunch: leftover pizza (I was bad and got pizza on Saturday 🙁 )
Dinner: pasta with oven-dried tomatoes
Using up: pasta, cherry tomatoes from my garden, cream cheese
Monday
Lunch: leftover pasta
Dinner: chicken-broccoli casserole
Using up: shredded chicken, frozen broccoli, rice, condensed soups, cheese, French-fried onions
Tuesday
Lunch: leftover pizza or casserole
Dinner: bible study where dinner is provided
Using up: leftovers
Wednesday
Lunch: more leftovers
Dinner: spaghetti and meatballs
Using up: pasta, meatballs, sauce
Thursday
Lunch: leftover pasta
Dinner: smorgasbord of whatever is left
Friday
Heading to the beach!!!
