And so begins the Christmas craziness! 
Am I the only one feeling the stress of the holiday season?  I’m about 95% finished with my shopping, but parties, holiday baking, and a few other things (more on that later!!) are contributing to my stress.  To help combat some of that stress, I’ve planned really easy meals this week. 
I know that I’m behind on the 12 Days of Christmas Cookies, but I promise I will have all the recipes posted by the 21st!  I may not be sticking to my original schedule, but I will get them all posted, I promise!
This weekend, we planned on being out doing various activities, so I didn’t plan any meals.  But, we ended up staying in Saturday and Sunday nights, so we ordered pizza on Saturday and on Sunday I made an impromptu trip to the grocery story amidst snow flurries (so unusually for this part of the US!) so I could make this chicken noodle soup.  It was delicious!!
This week’s menu:
Monday: Lentil soup over rice
Tuesday: Leftovers

I'm extremely busy right now… but aside from that, I'm not feeling overly stressed about the holidays. I'm bringing pie and another dessert to my grandparents house for Christmas, some sort of bread to my in-laws place for Christmas night/afternoon munching. Those I won't be making right now though.

All my christmas shopping is done…

What is getting to me? I packed up all my family's gifts.. and I still have to mail them! And I saw on the receipt from the post office today that the 7-10 day shipping? will force the presents there by Dec. 20. THAT'S THE SAME WEEK OF CHRISTMAS OMG.

So now I'm going to try and bring as many presents as I can to work tomorrow, so that I can drag them over to the post office on my break.

THAT is stressful. Hate thinking about all these presents without a Christmas tree to hibernate under. Blech.

I have to ask about the Lentil Soup. I've tried to make lentils twice and they just never get soft. I've never had them before this so I'm unsure of how tender they are supposed to be. I made Cate's wine braised lentils and cooked them for over an hour and still slightly crunchy. Is that how they are supposed to be normally? lol

I'd love the recipe for the soup though since I have a bulk bag at home I need to use up 😀

Therese, I hope you get to the post office tomorrow. The more stuff you can get done, the less we can stress about it! I'm working on just enjoying the holidays for what they are about, and not worrying about trying to make everything perfect.

Colean, I have the same problem with my lentils! I bought a bag and it said I didn't need to soak them, neither did the recipe, but yet they are still crunchy! I have no clue what's up, but I will investigate and report back. The soup that was on the menu tonight is actually such a cheater meal. It's just 3-4 cloves of minced garlic sauteed in a little olive oil (you could add a small onion if you wanted) and two cans of Progresso Lentil Soup poured over and heated until warm. Season with some salt and pepper and serve over rice with parmesan cheese, if desired. Very easy and quick, and very delicious. Plus no worrying about if the lentils are ever going to soften up!
