I’m trying out lots of new recipes this week! I’m glad that I made one of my August goals to try at least one new recipe a week because it’s really keeping me motivated to change up my menu. Everything so far has been really successful so I’m optimistic that this week will be the same!
There is still a good bit of meat left in the freezer so I’m incorporating it into the menu plan for the week. I was able to get a 4.5 pound chicken on sale for $1.19 a pound (under $6 total) so we enjoyed an awesome roasted chicken Sunday night. The leftover chicken makes great sandwiches when you spread the bread with a little basil mayonnaise.
This weekend we ate:
Friday: Shrimp, Sun-Dried Tomato, and Asparagus Over Pasta (new recipe)
Saturday: Steak with Shallot Cherry Sauce (new recipe), roasted potatoes, sliced cucumbers and tomatoes
Sunday: Ina Garten’s Perfect Roast Chicken (from the original Barefoot Contessa cookbook), Risotto with Peas, French Bread
The week I have planned:
Monday: Homemade pizza, salad
Tuesday: Leftovers
Wednesday: Cheddar Turkey Casserole
Thursday: Chicken and Artichokes in White Wine Sauce served over rice or pasta
