My mom and I decided we need to start eating a little bit better than we have over the past month or so. That means less yummy breads and cakes and more lean proteins and fresh vegetables. My menu isn’t 100% healthy, but I’m slowly adding back in some Weight Watchers recipes. Luckily my favorite local farmers’ stand has reopened this past week; that should make eating healthier more exciting and a little more frugal!
Sunday: Pasta with Homemade Tomato Sauce
Monday: Chicken and Green Beans with Lightened Lemon Butter Sauce, Roasted Potatoes
Tuesday: Horseradish Meatloaf, Weight Watcher’s Mashed Potatoes, Peas
Wednesday: Breakfast for Dinner: Hashbrown Casserole (recipe coming soon), Muffins
Thursday: Leftovers
Friday: Penne with Vodka Sauce
