MPM & Operation: Eat All the Food, Week 5

Hello, hello!  How was your weekend?  Mine was pretty terrific thanks to an Alabama football win (roll tide!) and getting a free skirt at The Limited’s BOGO sale.  I got some other stuff too, but I’m super psyched about the free skirt lol.  Did you do anything fun this weekend?  If you’re a football fan, did your team win?

Operation: Eat All the Food is progressing nicely.  I did really well this week and only deviated from my menu on Friday, but I ate leftovers instead so I consider that a win.  What isn’t going as well is my food waste and how much I spent at the grocery store.  I spent almost $50 this week (almost double what it has been lately!) and I threw away several things that I was either too scared to open or that were turning into lovely science experiments.

Things I used up this week:

  • pasta (I finished a box and am almost done with another!)
  • cherry tomatoes from my garden
  • parsley
  • chicken curry spice packet
  • naan
  • capers
  • chicken breasts
  • ground chicken

It should be noted that I am down to 1 package of ground beef and a few meatballs in my freezer.  That’s all the meat that I have left.  I even had to buy chicken this week (which was on sale!).  Good stuff.

Saturday I made two different kinds of sliders – my awesome gameday sliders and these chicken burgers that I turned into sliders to use up the small amount of ground chicken I had.  I also made this ranch pasta salad to use up more pasta, the cherry tomatoes that are still growing like crazy, and some frozen corn.  It was okay, but definitely not something I’ll make again.

Sunday
Lunch: leftovers
Dinner: potato chip chicken, pesto potato salad
Using up: potato chips, basil (from garden), pine nuts

Monday
Lunch: leftover potato salad, sandwich
Dinner: creamy caprese quinoa bake
Using up: lunch meat, bread, quinoa, cheese, tomato sauce, tomatoes and basil (from garden)

Tuesday
Lunch: leftovers
Dinner: bible study where dinner is provided
Using up: leftovers

Wednesday
Lunch: leftovers from Sunday or Monday
Dinner: pasta Florentine
Using up: pasta, frozen spinach, ground beef, tomato sauce

Thursday
Lunch: leftovers
Dinner: out (I have a late meeting at a different hospital)
Using up: leftovers

Friday
Lunch: sandwich, chips
Dinner: TBD
Using up: lunch meat, cheese, bread, chips

Saturday
Lunch: leftovers or a sandwich
Dinner: probably at my parents to watch the ball game

I know, right? I had to go to bed early because I so tired from jumping up and down for 3.5 hours!
