I did pretty well last week, considering I ate out twice. I was able to finish a few opened things and made a small dent in a few others. Here is a list of things I was supposed to have used up or at least make headway:

As you can see, I didn’t do too terribly. I still 10 eggs left but given that I started with almost 18, I think I’m doing okay there. I still have a few hot dog buns and a half bag of meatballs left. I’m planning on using those up this week. I ate half a box of pasta and finished a package of brown rice. I am tempted to replace the brown rice, but I have white, jasmine, basmati, and a lot of quinoa so I really don’t need to.
I spent about $25 at the grocery store on Sunday and that included some face wash and contact solution. I also got some parmesan cheese because I was out and some cantaloupe among a few other things. Okay, on to this week’s menu!
Sunday
Lunch: leftovers (my dad ate lunch with me so I was able to get rid of two portions! lol)
Dinner: balsamic chicken with mushrooms, quinoa with mushrooms and onion
Using up – chicken, mushrooms
Monday
Lunch: leftovers from Sunday
Dinner: crescent wrapped hot dogs, tator tots, steamed broccoli
Using up – crescent rolls, hot dogs, tator tots, broccoli
Tuesday
Lunch: leftovers from Monday, fruit
Dinner: Bible study where dinner is provided
Using up – making a dent in the leftovers
Wednesday
Lunch: leftovers from either Saturday or Monday
Dinner: spaghetti and meatballs, use hot dog buns for bread
Using up – pasta, meatballs, tomato sauce, buns
Thursday
Lunch: leftover pasta
Dinner: lemon chicken with potatoes, roasted broccoli
Using up: lemon, chicken, potatoes, broccoli
Friday
Lunch: leftovers from Thursday
Dinner: homemade margherita pizza
Using up: bread flour, cheese
Saturday
Lunch: leftover pizza
Dinner: out at a party
Breakfasts will be bagels, toaster strudels, fruit, and yogurt. Snacks are granola bars and graham crackers with nutella.

If you are looking for something unique to do with hot dog buns, my family loves this dessert recipe…if you don’t have vanilla, Kahlua will work in a pinch.
