I failed miserably last week. I didn’t get home from the beach until Tuesday night so I didn’t bother making a menu. I did go to the store because I made The Carpenter a big pre-birthday dinner on Wednesday, but I didn’t buy anything extra so I guess that’s a success. But I ate out way too much this week and spent way too much money. So I was careful when planning the menu this week that I would have enough leftovers for lunches. Buying my lunch at work is a huge weakness.
This week is all about pasta and rice. I’ve still got so much of both that you can’t even tell I’ve made a dent in it. However, my fridge and freezer are looking significantly less full and almost all the meat in my freezer is gone. I anticipate having a fairly bare freezer by the end of next week. And yes, I know that I said this was going to be a four week project, but since I pretty much skipped last week, I figured I’d better extend it.
Sunday
Lunch: leftover pizza
Dinner: hamburgers with my parents, Asian coleslaw
Monday
Lunch: leftover pizza
Dinner: pasta with tomatoes and herbs
Using up: pasta, cherry tomatoes (from my garden), parsley, thyme, basil (from my garden)
Tuesday
Lunch: leftover pasta
Dinner: bible study where dinner is provided
Using up: leftovers
Wednesday
Lunch: leftover pizza
Dinner: chicken curry over rice, naan
Using up: Indian spice mix packet, rice, naan
Thursday
Lunch: leftovers
Dinner: chicken piccata (adding spinach) over pasta
Using up: pasta, parsley, capers, frozen spinach
Friday
Lunch: leftover pasta
Dinner: breakfast for dinner
Using up: eggs, cheese, grits, bacon
Saturday
Lunch: game day food (I want to make some sliders!)
Dinner: TBD
Breakfasts will be bagel-fuls, poptarts, or regular bagels. I’ve got a brownie mix in my pantry that I should use; that will help use up some eggs too. 🙂

I’ve been trying to get back into meal planning but I’m not doing as well as I’d like to. Though I figure if I keep planning and keep trying it’ll get better eventually!
It will! Coming up with the plan is half the battle.
