Recipe: Candy Corn Cookies

A version of these has been going around Pinterest (need an invite? let me know!) for a while, but I like this version much better and I think they are cuter.  These are basically just plain ole’ sugar cookies, but they have such a cute presentation.  I think they would be great for a Halloween party, but they’re fun for anytime too.  I took a plate of them to work yesterday and got lots of compliments.

Candy Corn Cookies

1 cup butter (2 sticks)
1 1/2 cups powdered sugar
1 egg
1 teaspoon vanilla*
2 1/2 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon cream of tarter
Orange gel food coloring
Yellow gel food coloring
Sugar, for sprinkling

Cream butter and sugar together.  Beat in egg and vanilla; mix until well combined.  Stir in the flour, salt, baking soda, and cream of tarter.  Turn the dough out onto greased plastic (it will be very sticky!) and chill for 15 minutes.

When the dough is easier to work with, divide it into three equal portions.  Tint one portion orange and one yellow (I used about 1/8 teaspoon of each food coloring), leaving the third portion plain.  Make sure the color is evenly distributed.  Form into a disk, wrap in plastic again, and chill for another 20 to 30 minutes.

Lightly flour three pieces of wax paper and a rolling pin.  Roll each disk into a 12×9 rectangle.  Using the wax paper, flip the orange portion onto the yellow.  Top it with the plain portion.  Using the wax paper to help, roll the dough stack into a loose roll.  Wrap in plastic and refrigerate for an hour.

Preheat oven to 375°.  Grease or line baking sheets with parchment.  Slice the chilled roll into 1/4-inch slices.  Space about 1 inch apart on the prepared baking sheets.  Sprinkle with sugar.  Bake for 7-8 minutes or until the edges look set.  Cool on racks.

*The zest of an orange was in the original recipe.  I’ve made the cookies both ways and find I prefer the taste of the vanilla over the orange zest.  But it’s up to you.

HOW FUN! 😀 I saw these and was expecting a harry potter-theme today. They look so whimsical 🙂
