Recipe: Horseradish Meatloaf

Don’t let the title of this recipe scare you. It may just be the best meatloaf ever made. I cannot describe how good it is. I just know that it is important that you make it next time you are craving meatloaf.

Horseradish Meatloaf – 8 servings

2 pounds ground beef

¾ cup uncooked regular oats

1 large onion, chopped

½ cup ketchup

¼ cup milk

2 large eggs, lightly beaten

1 tablespoon prepared horseradish

1½ teaspoons salt

½ teaspoon pepper

Topping:

½ cup ketchup

3 tablespoons brown sugar

1 tablespoon prepared horseradish

2 teaspoons spicy brown mustard

Combine beef and next 8 ingredients in a large bowl and mix well. Place into a well-greased 9×5 loaf pan.

Mix topping ingredients together. Pour half of mixture over top of meatloaf. Bake, uncovered, in preheated 375° oven for 1 hour and 15 minutes. Spoon remaining topping mixture over meatloaf and bake for another 10 minutes. Allow to rest 10 minutes before serving.
