Does anyone ever feel like warm, summer days fly by while winter days seem to drag on forever? I feel like I blinked and May was gone, I blinked and last week was over in a flash. Now it’s into June and before we know it we’ll be planning 4th of July cookouts. Where does the time go?
Saturday: Veggie burger, warm potato salad (recipe coming soon!)
Sunday: Baked pasta with sausage, spinach, and mushrooms
Monday: Leftovers
Tuesday: Pasta with sausage, peas, and mushrooms (found in Everyday Italian but also here)
Wednesday: Dinner at a friend’s
Thursday: Leftovers if needed, lentils and rice if my fridge is bare
Friday: Out of town (I decided to take a risk)
Breakfasts are toast and jam (using a new forthcoming bread recipe!!), yogurt, and breakfast sandwiches. Lunches are leftovers to prevent food waste.

delicious week – those two pasta dishes caught my attention 🙂
I’ve had them both before and they are very tasty. I’m thinking of posting my version of the baked dish sometime soon.

I love leftovers. Either for lunch or for dinner. The only thing better than an awesome dinner is having that awesome dinner two days in a row. 😀
