I feel like all I do lately is eat out and eat leftovers.  It isn’t on purpose; I would much rather be cooking small meals and eating my own (slightly healthier) food, but it seems like I have so much to do and all of it comes around dinner time.  My wallet and my waistline are cringing from all the heavy, fatty, overly priced restaurant meals and I have a feeling that I’m going to have a good amount of food waste this week.  
I guess I could start having people over for dinner.  Is it rude to serve your guests leftovers?  🙂
This past weekend two of my closest friends from college came for a visit and I recreated one of our favorite sorority house dinners for us on Friday.  It didn’t taste quite the same without 70 other girls eating it too, but it was wonderful to spend time with my sweet friends.  
FridayPoppy seed chicken, rice, salad, oreo delight (recipe coming soon!)
Saturday – Out to dinner
Sunday – Leftovers
This week, when I’m not meeting up with friends who are in town for spring break (oh to still be in school!), I will be eating:
Monday – Out to dinner at The Cheesecake Factory – YUM!
Tuesday – Leftovers (either from Friday or more of the never ending bowl of Spinach Cream Sauce. Side note: does anyone know if you can freeze cream sauce?)
Wednesday – Out again
ThursdayYogurt-marinated chicken with mushrooms and sweet potatoes (I’ll be making this without the quinoa since I don’t need that much food.)

Ho hum! You week sounds low key and lovely in terms of dinners! And out and about so much, you sound so popular and social 😀

<–still sick. So I won't be doing anything extravagant. I'm thinking stuffed peppers tonight (but with a creamy garlic mixture rather than the traditional tomato base), stromboli, homemade zuppa toscana (if I can get a hold of some sausage at least!), and baked zucchini of sorts.

I have a boatload of baking potatoes… know of any good recipes to use up some of those?

Baking potatoes as in russets or Idahos? I like to make oven fries out of them. They're not quiet as good as real fries but an acceptable substitute, especially when you put fun seasonings on them. The internet is full of awesome recipes.

What about baked potatoes for dinner? You could top with all sorts of things like broccoli and cheese, chili, bacon and chives, other stuff I can't think of right now…you get the idea I'm sure. 🙂

They're idaho potatoes. Haven't ever made fries out of these kind… but I totallyyyyy spaced on MASHED POTATOES. Omg. Where is my head?

I usually only use them for baked potatoes… and last week we had them loaded with amazing goodness like you described 😀 (I do believe we would get along foodwise irl!).

Going to google, "Idaho potato recipes" and see what pops up. I'm crossing my fingers that Paula Deen has something with loads of butter 😉

This post has done two things: (1) inspired me to cook poppy seed chicken for dinner tonight and (2) inspired me to write my newest blog post, concerning how to eat yummy things like poppy seed chicken, yet still manage your weight. i'm hoping you can weigh-in on the topic (no pun intended).
