I’ve fallen behind on blogging again.  This is what happens when a) you don’t have a schedule, and b) your cat is so terrified you’re going to leave her again that she won’t let anything (including a computer) come between you and her.  Very sweet, but slightly annoying.  She did get off my lap long enough for me to make a grocery list and menu plan on Saturday, but as soon as I got back from the store, she was stuck to me like Velcro.  Poor baby.  She really did miss her mama.

Thanks to everyone who shared their opinion in my poll.  Everyone seems to love Menu Plan Mondays, so while I can’t promise I’m organized enough to share every week, it’s definitely a feature that’s here to stay.

Saturday:
Dinner with my parents – Ranch Pot Roast (no peppers), rice, balsamic asparagus with tomatoes

Sunday:
Mother’s Day dinner – Chicken, Mushroom, Asparagus, and Tomato pasta, bread, pound cake with strawberries

Monday:
Lunch – leftovers
Dinner – red beans and rice, cornbread

Tuesday:
Lunch – sandwich, chips and hummus
Dinner @ bible study

Wednesday:
Lunch – soup, cheese and crackers
Dinner – leftovers

Thursday:
Lunch – buy
Dinner – Parmesan crusted tilapia, roasted potatoes, green beans

Friday:
Lunch – sandwich, chips and hummus
Dinner – TBD (friends coming into town)

Breakfasts include leftover pound cake, bagels and cream cheese, and whatever I can scrounge up at work.

Might be trying that pasta you planned for Sunday. It sounds yummy.

You should; it’s delicious! I left out the sausage and subbed green beans for the asparagus so it’s extremely adaptable.
